Christophe sources and champions seasonal ingredients from small-scale UK farmers, with fish from day boats in Cornwall and Devon, England’s own Riviera, together with artisanal producers from France and Italy. Open all day and until late night, the Folie bar specializes in modern interpretations of classic cocktails. There you have a vast option of drinks from bellinis to negronis. Its signature (very dry) Folie Martini is the essential aperitif! There’s also a selection of rare and unusual pastis and vermouths, together with fine Armagnac and other digestifs. You can even find a menu of épicerie essentials. From pissaladiére and crudités with tapenades to charcuterie and panisse – the Marseille apéritif.

If things were going well, now they are about to go epic. While FOLIE’s menus focus on the Riviera, the wine list has a broader reach, including renowned vineyards across Europe. They are pleased to offer a fine selection of grande marques and grower champagnes. With prestige cuvées such as vintage Krug.

Harry Ballmann, the head of drinks, has curated an amazing menu. Towards the top chateaux and domains of Bordeaux, Burgundy, and the Rhône Valley. Both Guillaume and Harry are fans of large format bottles. So you can expect a decent selection of magnums and jeroboams. Ideal for special celebrations or large tables.
