Chefpreneur Olivier da Costa draws inspiration from cherished memories of his grandmother Maria Luísa, grandfather Augusto, aunt Matilde, and uncle Jorge. Olivier expresses his desire to return to traditional Portuguese cooking, highlighting iconic dishes such as açorda and grilled fish. “It’s something I’ve been thinking about for a long time. I wanted to work on a concept that celebrates our Portuguese roots,” he shares. Signature dishes include: grilled Fish with a lemon and herb butter sauce, inspired by Olivier’s uncle Jorge’s underwater fishing expeditions; Sr. Augusto Scarlet Prawns, a dish reminiscent of the chef’s grandfather’s garlic and paprika shrimp preparation, and Chocolate Mousse, a playful reinterpretation that recalls the delightful treats Olivier’s grandmother would make for him and his cousins.
