Disfrutar, located in Barcelona, is one of the leading names in modern gastronomy, founded by chefs Oriol Castro, Eduard Xatruch, and Mateu Casañas. The restaurant’s history dates back to when the three met at El Bulli, the legendary restaurant of Ferran Adrià, where they worked as head chefs. There, they honed their skills in an environment of intense pressure, which became the foundation for their future journey. When El Bulli closed its doors, the trio saw a unique opportunity to create something of their own. In 2014, they opened Disfrutar with the goal of creating innovative cuisine that was both technical and creative. Since its opening, the restaurant has stood out for its originality and bold proposals, quickly gaining recognition in the culinary world.
Disfrutar’s philosophy is deeply centered on collective creativity, an essential aspect of the team’s work. Each dish created is a work of art, the result of a process involving much research and experimentation. For this, the restaurant has a dedicated space for the development of new techniques and recipes, where the team constantly works on new concepts. This approach allows them to consistently push boundaries and redefine what modern cuisine can be.
One of Disfrutar’s most emblematic creations is multi-spherification, a technique that encapsulates liquids into delicate spheres, providing a unique sensory experience. The technique was used in the Multispherical Tatin of Corn and Foie, which became one of the restaurant’s most famous dishes, clearly showing how innovation is incorporated into modern cuisine. The constant pursuit of new possibilities also leads to the reinterpretation of classic recipes, such as the creation of flourless pastries, using techniques like obulato and inulin, resulting in unexpected textures that closely resemble traditional ones but with a completely different approach.
Another memorable dish is the Chinese bread, a light fried dough, often filled with sophisticated ingredients like caviar and crème fraîche. These dishes exemplify Disfrutar’s ability to create unexpected combinations and innovative preparation techniques. Each dish is carefully designed to surprise and delight the senses, creating a truly immersive experience for diners.
