In French, Chambar loosely translates to: “When the teacher’s away, the kids go crazy.” Many people thought Chef Nico Schuermans and wife Karri were indeed crazy when they first opened their doors a decade ago. Since then, Chambar has become one of Vancouver, BC’s top destination restaurants.
In that time, an entirely new neighbourhood sprang up around the restaurant as Beatty Street’s derelict car parks and vacant buildings were transformed into the fashionable condos and boutiques of “Crosstown.”

After 10 years in the same location, owner Karri Schuermans was ready for the next step: moving the entire enterprise next door into a much larger, 10,000 square-foot, two-storey, 1912 heritage building.

The natural beauty of Canada’s West Coast inspired co-owner Karri Schuermans’ design aesthetic. Mirroring her husband, Chef Nico Schuermans’ use of West Coast ingredients paired with classic European and North African flavours, Karri’s design is eclectic, clean and modern with touches of old-world splendour. A true family affair, her father is responsible for all custom millwork and the restaurant’s Parallam tables.
“My intention was to create a room that was more than a restaurant space,” says Schuermans. “I wanted to make a cultural contribution. Vancouver has finally realized it can be independent of mass trends and celebrate its own artists and designers in an international context.”
One of the most amazing elements in this new space is the custom-designed peacock wallpaper inspired by the thematic motif of London’s famous Whistler Room, long hailed as a masterpiece of interior decorative mural art. It was designed by a friend of the designer and painstakingly created with multiple overlays by Toronto-based Rollout Custom Wallpaper.
In order to understand the concept of the restaurant Chambar we would advise to pay your attention to the front entrance which is decorated with the mosaic tiles. Being installed by Richard Finch Tile, this element of design was found accidentally by the designer.
The other peculiar detail implemented in interior design seems to be the Venetian plaster over the bar ceiling arch. The designer has a story how she came across this remarkable object.
“I once waded into a Venice hardware store searching for shelter from a flash flood. On the shop’s back wall were floor-to-ceiling shelves containing jars of pigment. I fell in love with a magnificent crushed teal marble pigment and purchased it on the spot. I later learned it was unique to Venice during the Renaissance.”
The outdoor decor of the restaurant includes the heritage brick patio. The vines and many plants are from cuttings from backyard of Karri Schuermans’ background.
