In the heart of Paris’s 9th arrondissement, Colère is chef Eloi Spinnler’s latest culinary expression — a restaurant where fire, flavor, and philosophy converge. Following the success of his first restaurant Orgueil, Spinnler continues his creative journey through the seven deadly sins, giving form to colère (anger) through a cuisine that is bold, conscious, and deeply personal.

 

 

Spinnler, known for his viral presence on social media and his innovative, zero-waste cooking, approaches heat not as a challenge but as a language. At Colère, peppers from around the world are explored for their nuance and depth, and their intensity is tamed with the precision of French technique. The result is a menu that’s vibrant, inclusive, and designed for sharing.

 

 

 

Divided into three acts — Trigger, Expression, Resolution — the menu plays with both structure and surprise. Among its signatures: the “Russian Roulette” brioche filled with fiery surprises, a Camargue rice cacio e pepe enriched with red wine and egg yolk, and a pork côte served pierrade-style on a salt stone. Vegetables, bones, off-cuts, and peels are transformed into soulful dishes that speak to Spinnler’s eco-driven ethic.

 

 

 

Hidden behind an Élitis curtain lies Le Théâtre, a speakeasy-style dining space for 15 guests, where the kitchen becomes a stage. Here, diners are immersed in a live, interactive tasting experience — part choreography, part communion.

 

 

 

 

The décor, imagined by Friedmann & Versace, blends mythological drama with raw elegance: sculpted lions, phoenix motifs, bronze patinas, and tactile ceramics tell a story of elemental power and rebirth. Like its name, Colère doesn’t shout — it simmers, stirs, and ultimately, seduces.
